We deliver labelled crates to your outlet, you fill them as glasses come off the tables, and a Halo Clean driver collects on the agreed run, photographing the handover. Yes, and they get their own treatment. Reusable polycarbonate and Tritan cups are light, tip under a strong wash and dry poorly, so they run on Winterhalter’s reusables programme with the wash parameters configured for plastics, in dedicated racks, with the rinse aid Winterhalter developed for plastics, and then through the DMX drying device so they come back dry enough to stack immediately. Glass and polycarbonate never share a rack, and both are counted and inspected the same way.

No. Spots and streaks come from minerals in the rinse water drying on the glass, not from the wash itself. Our line runs on Winterhalter’s reverse osmosis water treatment, which takes those minerals out, so glasses come off the machine spot-free and are never touched by a cloth. Winterhalter’s own hygiene guidance is that a used tea towel can hold up to 100 million germs on ten square centimetres and that hand polishing is strongly discouraged in professional foodservice. We agree, which is why every glass is inspected under the light, stored opening down and returned untouched.

The RAK Food Code sets the standard for the facility and the programme rather than the address. It requires adequate facilities for cleaning and disinfecting utensils, hot and cold potable water, food grade chemicals, staff who understand them and monitor the automatic dishwashers and dosing, and a safety data sheet for every product (clauses 4.9.2.1 to 4.9.2.3). It requires a documented cleaning and sanitising programme, established where appropriate with specialists (clause 10.1), and chemicals used only to the manufacturer’s instructions (clause 10.3.1). F 420 e is the glasswashing detergent, an EU Ecolabel certified product that is chlorine and phosphate free and that Winterhalter specifies for both glasses and reusable plastic cups. B 2 S is the rinse aid for glass. B 170 XD is the rinse aid Winterhalter developed specifically for plastics and runs on the polycarbonate loads. All three are dosed automatically by the machine to the manufacturer’s instructions, stored separately from anything else, and their safety data sheets travel with your wash record, which is what the Food Code asks for in clauses 4.9.2.3 and 10.3.1.

Winterhalter’s published guidance for hygienic warewashing is a wash above 60°C and a rinse for glasses at around 65°C, and the PT series machines carry a temperature monitoring device (Thermostop) that holds the cycle to its set points. Polycarbonate runs on the separate reusables programme, with parameters Winterhalter configures for plastics, so it is never subjected to a glass cycle. The RAK Food Code does not prescribe warewashing temperatures itself; it requires food grade chemicals, monitored machines and the manufacturer’s instructions, which is what the line follows.

The RAK Food Code says defective dishware, meaning anything chipped, cracked or surface scarred, shall not be in use during service (clause 13.16.7). Every glass is inspected under the light after drying, and anything defective is set aside, listed and returned to you separately so your team can retire it rather than find it in a guest’s hand. Breakage during collection, washing and return is rare on a purpose-built line with dedicated racks, and how it is handled is written into your quote before the first crate leaves, so there are no surprises on either side.

Ministerial Decision No. 380 of 2022 from the Ministry of Climate Change and Environment bans the import, production and trade of single-use plastic beverage cups and lids, cutlery, plates, straws, stirrers and Styrofoam food containers across the UAE from 1 January 2026, and Ras Al Khaimah’s Law No. 4 of 2023 prohibits the import, possession, trade, sale or use of single-use plastics throughout the Emirate, with fines and licence suspension for breaches. Most resorts also keep glass away from the pool and the beach for safety. That leaves reusable polycarbonate as the practical answer for poolside service, and reusables only work with a washing loop behind them. We wash, dry and return them on a rota that matches your service.

Yes, when they travel in the same crates we wash them on the same line and quote them as part of the same job. Two rules apply. Glass and polycarbonate are always racked separately from plates and cutlery, and where an outlet serves non-halal food its crockery, cutlery and utensils are marked and washed separately, as the RAK Food Code requires in clause 28.4. A small cafe sending a few racks on brunch days and a resort sending crates from three outlets every evening are both jobs we want; the run, the crates and the price are simply sized differently.
